Description

Ingredients

  • 1 cup unsalted butter, melted and cooled slightly
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1.5 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp cinnamon powder
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1.5 cups roughly chopped pecans, toasted if preferred
  • 1/2 cup toffee bits (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  3. Add eggs and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together flour, cinnamon, cornstarch, baking soda, and baking powder.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chopped pecans and toffee bits if using.
  7. Scoop dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
  8. Bake for 10-12 minutes or until golden brown around the edges.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Enjoy warm or store in an airtight container for freshness.
