- ½ cup brown sugar, packed

- 1 large egg
- 1 teaspoon vanilla extract
- ¾ cup graham cracker crumbs
- 4 ounces cream cheese, softened
- 2 tablespoons granulated sugar
- ½ teaspoon vanilla extract
- ½ cup caramel sauce
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a separate bowl, beat butter, brown sugar, and granulated sugar until fluffy.
- Mix in egg and vanilla extract.
- Gradually add dry ingredients, mixing until combined.
- Stir in graham cracker crumbs.
- In another bowl, beat cream cheese, sugar, and vanilla extract until smooth.
- Roll cookie dough into 1-inch balls, flatten slightly, and make a small indent in the center.
- Spoon a small amount of cheesecake filling into each indent.
- Bake for 10-12 minutes or until edges are golden.
- Drizzle with caramel sauce before serving.
Notes
For extra crunch, sprinkle crushed graham crackers on top before baking.
