Description

Who needs traditional bread when you can enjoy cheesy, garlicky cauliflower breadsticks? This low-carb, keto-friendly alternative is crispy on the edges, soft in the center, and loaded with cheesy goodness!


Ingredients

  • 1 medium head of cauliflower (about 45 cups riced)
  • 1 large egg
  • 1 cup (100g) shredded mozzarella cheese
  • ¼ cup (25g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tbsp fresh parsley, chopped (optional, for garnish)
  • Extra mozzarella cheese for topping

Instructions

  1. Preheat & Prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or grease well.
  2. Rice the Cauliflower: Cut cauliflower into florets and pulse in a food processor until it resembles fine rice. Transfer to a microwave-safe bowl and microwave for 5 minutes (or steam on the stovetop). Let cool slightly, then place in a clean towel and squeeze out as much moisture as possible. This step is key for crispy breadsticks!
  3. Mix the Dough: In a bowl, mix cauliflower, egg, mozzarella, Parmesan, Italian seasoning, garlic powder, salt, and pepper. Stir until combined.
  4. Shape & Bake: Spread the mixture onto the prepared baking sheet, shaping into a rectangle about ¼-inch thick. Bake for 15–18 minutes, or until golden brown and firm.
  5. Add More Cheese & Broil: Sprinkle extra mozzarella on top and return to the oven. Broil for 2–3 minutes until cheese melts and turns bubbly.
  6. Slice & Serve: Cut into breadstick shapes, sprinkle with fresh parsley, and serve with marinara or garlic butter dipping sauce!

Notes

For an extra crispy crust, place the baked breadsticks on a wire rack for a few minutes before serving!
