- ½ cup breadcrumbs (plain or panko for extra crunch)
- ¼ cup grated Parmesan cheese
- 1 large egg
- 2 green onions (finely chopped)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper (to taste)
- For Coating and Frying:
- ½ cup all-purpose flour
- 1 large egg (beaten, for egg wash)
- 1 cup breadcrumbs (plain or seasoned)
- Oil for frying (vegetable, canola, or peanut oil work well)
- Optional Dipping Sauces:
- Ranch dressing
- Honey mustard
- Spicy sriracha mayo
- Marinara sauce
Instructions
- In a large bowl, combine shredded chicken, shredded cheese, breadcrumbs, Parmesan cheese, egg, green onions, garlic powder, paprika, salt, and pepper.
- Mix well until the mixture holds together.
- Form small patties or fritters with the mixture.
- Coat each fritter in flour, dip in beaten egg, then coat with breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry fritters in batches until golden brown and crispy, about 3-4 minutes per side.
- Drain on paper towels and serve warm with your favorite dipping sauce.
Notes
For a healthier option, bake at 400°F (200°C) for 15-18 minutes or air-fry at 375°F for 10-12 minutes.
