- For the Cake Base:
- 1 box chocolate cake mix (18.25 oz)
- 1 large egg, at room temperature
- ½ cup unsalted butter, melted
- 1 teaspoon pure vanilla extract
- For the Gooey Filling:
- 8 oz cream cheese, softened
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- ½ cup unsalted butter, melted
- 3½ cups powdered sugar
- ⅓ cup unsweetened cocoa powder
- ½ cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish and optionally line with parchment paper for easy removal.
- In a large bowl, combine cake mix, 1 egg, melted butter, and vanilla. Mix until thick like cookie dough. Press evenly into prepared pan.
- In another bowl, beat softened cream cheese until smooth. Add eggs one at a time, then beat in melted butter and vanilla.
- Gradually add powdered sugar and cocoa powder, mixing until smooth. Fold in chocolate chips.
- Pour chocolate filling over the cake base and spread evenly.
- Bake 40-45 minutes until edges are set but center still jiggles slightly. Do not overbake.
- Cool in pan for at least 30 minutes before slicing. Dust with powdered sugar if desired and serve.
Notes
For extra decadence, serve warm with a scoop of vanilla ice cream or drizzle with caramel sauce. Store covered at room temperature for 2 days or refrigerate for up to 5 days.
