  • For the Cake Base:
  • 1 box chocolate cake mix (18.25 oz)
  • 1 large egg, at room temperature
  • ½ cup unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • For the Gooey Filling:
  • 8 oz cream cheese, softened
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter, melted
  • 3½ cups powdered sugar
  • ⅓ cup unsweetened cocoa powder
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish and optionally line with parchment paper for easy removal.
  2. In a large bowl, combine cake mix, 1 egg, melted butter, and vanilla. Mix until thick like cookie dough. Press evenly into prepared pan.
  3. In another bowl, beat softened cream cheese until smooth. Add eggs one at a time, then beat in melted butter and vanilla.
  4. Gradually add powdered sugar and cocoa powder, mixing until smooth. Fold in chocolate chips.
  5. Pour chocolate filling over the cake base and spread evenly.
  6. Bake 40-45 minutes until edges are set but center still jiggles slightly. Do not overbake.
  7. Cool in pan for at least 30 minutes before slicing. Dust with powdered sugar if desired and serve.

Notes

For extra decadence, serve warm with a scoop of vanilla ice cream or drizzle with caramel sauce. Store covered at room temperature for 2 days or refrigerate for up to 5 days.
