Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat butter and sugar until light and fluffy.
- Add eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients and mix until dough forms.
- In another bowl, mix softened cream cheese with sugar until smooth.
- Take a tablespoon of cookie dough, flatten it, add a small dollop of cheesecake filling, and top with another piece of dough. Seal edges and form into a cookie shape.
- Place cookies on the baking sheet and bake for 12-15 minutes, or until golden brown.
- Let cool slightly, then roll cookies in cinnamon sugar for a classic churro finish!
