- 3 large eggs
- ½ cup cottage cheese (full-fat or low-fat)
- 3 tablespoons maple syrup (adjust to taste)
- 2 teaspoons vanilla extract
- 2 ½ cups almond flour

- 2 teaspoons ground cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, mash the bananas until smooth.
- Add eggs, cottage cheese, maple syrup, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together almond flour, baking soda, and cinnamon.
- Gradually fold dry ingredients into the wet mixture until just combined.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
