Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup fresh orange juice
  • 1 tablespoon orange zest
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh or frozen cranberries, halved
  • ½ cup chopped walnuts or pecans (optional)

For the Orange Glaze (Optional):

  • ½ cup powdered sugar
  • 2 tablespoons fresh orange juice
  • ½ teaspoon orange zest

Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

Step 2: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Step 3: In a separate bowl, whisk together the melted butter, orange juice, orange zest, eggs, and vanilla extract until smooth.

Step 4: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix!

Step 5: Gently fold in the cranberries and nuts (if using). The batter will be thick.

Step 6: Pour the batter into the prepared loaf pan and smooth the top.

Step 7: Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Step 8: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 9: (Optional) Whisk together the powdered sugar, orange juice, and zest for the glaze. Drizzle over the cooled bread before serving.

Notes

  • For extra moisture, substitute Greek yogurt or sour cream for half of the butter.
  • If using frozen cranberries, do not thaw them before adding to the batter.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
