- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt, pepper, and oregano.
- Cook chicken for 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened.
- Add orzo and chicken broth, bringing to a simmer.
- Return chicken to the skillet and cover. Cook for 10-12 minutes until orzo is tender.
- Stir in ricotta and Parmesan cheese, mixing until creamy.
- Adjust seasoning, garnish with fresh parsley, and serve warm.
Notes
For extra flavor, add a squeeze of lemon juice before serving.
