  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt, pepper, and oregano.
  3. Cook chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, sauté onion and garlic until softened.
  5. Add orzo and chicken broth, bringing to a simmer.
  6. Return chicken to the skillet and cover. Cook for 10-12 minutes until orzo is tender.
  7. Stir in ricotta and Parmesan cheese, mixing until creamy.
  8. Adjust seasoning, garnish with fresh parsley, and serve warm.
