Instructions
- In a mixing bowl, whisk together cornmeal, flour, baking powder, and salt.
- In a separate bowl, beat the egg and mix in the buttermilk.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Heat vegetable oil in a skillet over medium-high heat.
- Drop spoonfuls of batter into the hot oil, flattening slightly.
- Fry for 2-3 minutes per side or until golden brown and crispy.
- Drain on paper towels and serve warm.
Notes
For extra crunch, add a tablespoon of corn kernels or chopped jalapeños to the batter.
