DEVILED EGG PASTA SALAD

Description

A creamy, tangy, and flavorful deviled egg pasta salad that’s the perfect side dish for any occasion!


Ingredients

  • 6 large hard-boiled eggs, peeled and chopped
  • 8 oz elbow macaroni, cooked & cooled
  • 1¼ cups mayonnaise
  • 2½ tbsp yellow mustard
  • 1 tsp kosher salt
  • ¾ tsp smoked paprika (plus extra for garnish)
  • ½ cup red onion, finely diced
  • 1 medium stalk celery, finely chopped
  • 1 green onion, sliced

Instructions

  1. Cook the pasta according to package instructions. Drain, rinse with cold water, and set aside.
  2. Peel and chop the hard-boiled eggs.
  3. In a large bowl, whisk together mayonnaise, mustard, salt, and smoked paprika.
  4. Add the cooked pasta, chopped eggs, red onion, celery, and green onion to the bowl. Stir until well combined.
  5. Cover and refrigerate for at least 30 minutes before serving for the best flavor.
  6. Garnish with extra smoked paprika and sliced green onions before serving.

Notes

For extra creaminess, mash 2 of the eggs into the dressing before mixing!
