Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 cup panko breadcrumbs
  • 2 tablespoons ranch seasoning mix (1 packet)
  • ½ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 3 tablespoons melted butter (or olive oil)
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • Cooking spray
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spray lightly with cooking spray. Optional: place a wire rack on the baking sheet for crispier results.
  2. Pat chicken breasts dry and pound to an even thickness if necessary.
  3. In a shallow bowl, combine panko, ranch seasoning, Parmesan, garlic powder, paprika, black pepper, and salt. Drizzle melted butter over and toss to coat.
  4. In another shallow bowl, beat the eggs.
  5. Dip each chicken breast into the eggs, then coat thoroughly in the breadcrumb mixture. Press to adhere. Place on prepared baking sheet.
  6. Lightly mist tops with cooking spray. Bake for 18-22 minutes, or until chicken reaches 165°F (74°C) internal temperature and coating is golden and crispy.
  7. Let chicken rest for 3-5 minutes before serving. Garnish with fresh parsley if desired.

Notes

For a spicier version, add 1-2 teaspoons of cayenne pepper to the breadcrumb mixture. Store leftovers in an airtight container and reheat in a 350°F oven for best results.
