- 1½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs

- ½ cup buttermilk
- ¼ cup butterbeer (or cream soda)
- ¼ tsp butterscotch extract (optional, for extra richness)
- For the Frosting:
- ½ cup unsalted butter, softened
- 1 cup powdered sugar
- 2 tbsp butterscotch sauce
- 1 tbsp heavy cream (or milk)
- ¼ tsp vanilla extract
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Make the Batter: In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs, one at a time, then mix in vanilla. Alternately add flour mixture and buttermilk + butterbeer, mixing until just combined.
- Bake the Cupcakes: Fill liners 2/3 full and bake for 18-20 minutes, or until a toothpick comes out clean. Let cool completely.
- Prepare the Frosting: Beat butter and powdered sugar until smooth. Add butterscotch sauce, cream, and vanilla; beat until fluffy.
- Assemble & Serve: Pipe frosting onto cooled cupcakes. Drizzle with extra butterscotch sauce for an enchanted finish!
