- ¾ cup graham crackers, crushed
- 3 tbsp brown sugar
- 3 tbsp melted unsalted butter

- 8 oz cream cheese, softened
- 1 cup heavy cream
- 2 tbsp granulated sugar
- ½ tsp vanilla extract
- ½ tsp cinnamon
- 1 tsp lemon juice
- For the Topping:
- ½ cup cherry pie filling
- Optional: Sprinkle of ground cinnamon for garnish
Instructions
- Make the Crust: In a small bowl, combine crushed graham crackers, brown sugar, and melted butter. Mix until it looks like wet sand. Spoon about 1 tablespoon into the bottom of each mini cup or shot glass and press down firmly to form the crust.
- Prepare the Filling: In a mixing bowl, beat the softened cream cheese until smooth. Add sugar, lemon juice, vanilla, and cinnamon. Beat until well blended. Slowly add the heavy cream and beat until light and fluffy, about 2–3 minutes.
- Assemble: Spoon or pipe the cream cheese mixture over the graham crusts. Smooth the tops. Add 1 spoonful of cherry pie filling on top of each. Sprinkle with a tiny dash of cinnamon if desired.
- Chill & Serve: Refrigerate for at least 1 hour before serving. Keep chilled until ready to eat.
