- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup BBQ sauce (your favorite brand)
- 1 can (or 1 ½ cups fresh) pineapple chunks
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium red onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika (optional)
- 2 tbsp chopped fresh cilantro (for garnish)
Instructions
- Preheat grill to medium-high heat (375°F) or oven to 400°F. Cut 4 large sheets of foil (about 12×12 inches).
- Place a chicken breast in the center of each foil sheet. Drizzle with olive oil, then season with garlic powder, salt, pepper, and smoked paprika.
- Add pineapple chunks, bell peppers, and red onion around the chicken. Drizzle BBQ sauce evenly over everything.
- Fold the foil over the ingredients, sealing the edges tightly to create a packet.
- Grill: Place packets on the grill for 15-20 minutes, flipping once, until chicken is cooked through. Oven: Bake on a baking sheet for 25-30 minutes.
- Carefully open the packets (watch for steam!), sprinkle with fresh cilantro, and enjoy!
