- 1 cup (140g) raw almonds or cashews
- 1 cup (150g) Medjool dates, pitted
- Pinch of salt
- For the Key Lime Filling:
- 1½ cups (225g) raw cashews, soaked for at least 4 hours and drained
- ½ cup (120ml) fresh lime juice
- Zest of 2 limes
- ⅓ cup (80ml) coconut oil, melted
- ⅓ cup (80ml) maple syrup or agave nectar
- 1 tsp pure vanilla extract
- Pinch of salt
- Optional Topping:
- Shredded coconut or additional lime zest
Instructions
- Prepare the Base: Line an 8×8-inch (20×20 cm) baking dish with parchment paper. In a food processor, combine the almonds (or cashews), pitted dates, and salt. Process until crumbly but sticky. Press the mixture firmly into the prepared dish to form the crust.
- Prepare the Key Lime Filling: In the same food processor, add soaked cashews, lime juice, zest, coconut oil, maple syrup (or agave), vanilla, and salt. Blend until smooth and creamy, scraping down sides as needed.
- Assemble the Bars: Pour the key lime filling over the crust. Spread evenly. Top with shredded coconut or extra lime zest if desired.
- Chill and Serve: Refrigerate for at least 4 hours until firm. Once set, cut into bars or squares. Serve chilled and enjoy!
Notes
Storage: Keep in an airtight container in the fridge for up to 1 week. For longer storage, freeze for up to 1 month. Lime tip: Use key limes for more authentic flavor if available!
