  • 1 teaspoon vanilla extract
  • 1 cup oat flour (or finely ground oats)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. Make the Batter: In a mixing bowl, whisk together the peanut butter, Greek yogurt, honey (or maple syrup), egg, and vanilla extract until smooth and creamy.
  3. Dry Ingredients: Add oat flour, baking soda, and cinnamon. Stir until just combined — do not overmix.
  4. Add Chocolate Chips: Fold in the mini chocolate chips. Sprinkle a few extra on top for a bakery-style finish.
  5. Bake: Pour batter into the dish and spread evenly. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
