- 1½ lbs beef stew meat or chuck roast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 8 cups beef broth
- 1 cup pearl barley
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- (Optional) 8 oz mushrooms, sliced
- (Optional) Fresh parsley, chopped (for garnish)
Instructions
- Sear the Beef: In a large pot or Dutch oven, heat 1 tbsp olive oil over medium-high heat. Season beef with salt and pepper. Working in batches, sear the beef until browned on all sides (4–5 minutes per batch). Remove and set aside.
- Sauté the Vegetables: In the same pot, add the remaining 1 tbsp olive oil. Sauté onion, carrots, and celery for 5 minutes until beginning to soften. Stir in garlic and cook for another minute.
- Build the Soup: Return seared beef to the pot. Add beef broth, bay leaf, and thyme. Bring to a gentle boil, then reduce to low, cover, and simmer for 1 hour until beef is tender.
- Add Barley and Optional Mushrooms: Stir in pearl barley (and mushrooms if using). Cover and simmer for another 30–40 minutes until barley is tender and soup has thickened slightly.
- Season and Serve: Remove bay leaf, adjust seasoning with salt and pepper. Garnish with parsley if desired. Serve hot.
