A simple and delicious homemade mozzarella cheese recipe that you can easily make in your kitchen.
Ingredients
Scale
- 1 gallon whole milk (not ultra-pasteurized)
- 1 1/4 teaspoon citric acid
- 1/4 tablet rennet (dissolved in 1/4 cup water)
- 1 teaspoon salt
- Water (as needed)
Instructions
- Heat the milk to 90°F (32°C) in a large pot, stirring gently.
- Stir in the citric acid and mix well.
- Add the rennet mixture and stir gently for 30 seconds.
- Let the milk sit undisturbed for 5 minutes until curds form.
- Cut the curds into cubes and heat to 105°F (40°C), stirring gently.
- Strain the curds and gently press out excess whey.
- Heat the curds in hot water (170°F/76°C) until stretchy.
- Knead the curds, adding salt, and stretch until smooth.
- Shape into a ball and place in cold water to set.
- Store in the refrigerator and enjoy fresh!
Notes
For best results, use non-ultra-pasteurized milk and adjust salt to taste.
