Description

A simple and delicious homemade mozzarella cheese recipe that you can easily make in your kitchen.


Ingredients

Scale
  • 1 gallon whole milk (not ultra-pasteurized)
  • 1 1/4 teaspoon citric acid
  • 1/4 tablet rennet (dissolved in 1/4 cup water)
  • 1 teaspoon salt
  • Water (as needed)

Instructions

  1. Heat the milk to 90°F (32°C) in a large pot, stirring gently.
  2. Stir in the citric acid and mix well.
  3. Add the rennet mixture and stir gently for 30 seconds.
  4. Let the milk sit undisturbed for 5 minutes until curds form.
  5. Cut the curds into cubes and heat to 105°F (40°C), stirring gently.
  6. Strain the curds and gently press out excess whey.
  7. Heat the curds in hot water (170°F/76°C) until stretchy.
  8. Knead the curds, adding salt, and stretch until smooth.
  9. Shape into a ball and place in cold water to set.
  10. Store in the refrigerator and enjoy fresh!

Notes

For best results, use non-ultra-pasteurized milk and adjust salt to taste.
