- Preheat Oven & Prep Pan: Preheat oven to 325°F (163°C). Grease and flour a 10-inch Bundt pan.
- Cream Butter & Cream Cheese: In a large bowl, beat butter and cream cheese until smooth and fluffy.
- Add Sugar: Gradually add sugar and continue beating until light and airy.
- Incorporate Eggs & Vanilla: Add eggs one at a time, mixing well between each addition. Stir in vanilla extract.
- Mix Dry Ingredients: In a separate bowl, whisk flour and salt. Gradually add to wet ingredients and mix just until combined.
- Fold in Strawberries: Gently fold in the chopped strawberries until evenly distributed.
- Bake: Pour batter into prepared pan, smooth the top, and bake for 70–80 minutes, or until a toothpick comes out clean.
- Cool: Let cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
- Make Glaze (Optional): Whisk powdered sugar, strawberry purée, and vanilla until smooth. Drizzle over cooled cake.
Notes
Tip: Pat strawberries dry before folding into the batter to prevent excess moisture. Full-fat butter and cream cheese provide the best richness. For extra tang, add a squeeze of lemon juice to the glaze.
