Instructions

  1. Preheat Oven & Prep Pan: Preheat oven to 325°F (163°C). Grease and flour a 10-inch Bundt pan.
  2. Cream Butter & Cream Cheese: In a large bowl, beat butter and cream cheese until smooth and fluffy.
  3. Add Sugar: Gradually add sugar and continue beating until light and airy.
  4. Incorporate Eggs & Vanilla: Add eggs one at a time, mixing well between each addition. Stir in vanilla extract.
  5. Mix Dry Ingredients: In a separate bowl, whisk flour and salt. Gradually add to wet ingredients and mix just until combined.
  6. Fold in Strawberries: Gently fold in the chopped strawberries until evenly distributed.
  7. Bake: Pour batter into prepared pan, smooth the top, and bake for 70–80 minutes, or until a toothpick comes out clean.
  8. Cool: Let cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  9. Make Glaze (Optional): Whisk powdered sugar, strawberry purée, and vanilla until smooth. Drizzle over cooled cake.
