Not exaggerating with the CAPS when I say this was SO GOOD! Recipe calls for 8 enchiladas, but I ended up with 9. And they were still very well stuffed and filling.
For the jalapenos, we did 1/4 cup each of fresh and pickled, but I think it still needed more to get the jalapeno flavor. So, next time, I’ll probably land somewhere between 3/4 cup or 1 cup. Also, by mistake, I used 1 teaspoon each of all the dried spices vs. 1/2 teaspon, and it was not overpowering at all. Blended well and melded with the richness of the creamy/cheesy filling and sauce.
