  • Author: Erin
  • Total Time: 2 hours 20 minutes
  • Yield: 12 servings 1x

Description

This Juicy Pineapple Heaven Cake is the ultimate tropical treat—moist, bursting with crushed pineapple, topped with a tangy cream cheese frosting, and garnished with fresh pineapple and toasted coconut. Pure sunshine in every slice.

Ingredients

Scale
  • 2½ cups all-purpose flour
  • 1½ cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs, at room temperature
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons pineapple juice (reserved from can)
  • Fresh pineapple slices or chunks (for garnish)
  • Toasted coconut flakes (for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs until frothy, then add oil and vanilla. Mix until well combined.
  4. Combine wet and dry ingredients, mixing gently just until incorporated. Fold in crushed pineapple (with juice) and walnuts if using.
  5. Pour batter into the prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted comes out with a few moist crumbs.
  6. Cool the cake completely in the pan or on a wire rack before frosting.
  7. For the frosting, beat softened cream cheese and butter until smooth. Gradually add powdered sugar, then vanilla and pineapple juice. Beat until fluffy and spreadable.
  8. Spread frosting over cooled cake. Garnish with fresh pineapple, toasted coconut flakes, and mint leaves if desired.
  9. Refrigerate for at least 1 hour before serving. Let it sit at room temperature for 15 minutes before slicing for best texture and flavor.

Notes

Do not drain the crushed pineapple—its juice ensures a moist, flavorful cake. For best results, prepare the cake a day ahead to allow the flavors to develop.
