Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat eggs until frothy, then add oil and vanilla. Mix until well combined.
- Combine wet and dry ingredients, mixing gently just until incorporated. Fold in crushed pineapple (with juice) and walnuts if using.
- Pour batter into the prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted comes out with a few moist crumbs.
