Description
Soft, buttery cookies inspired by the classic Kentucky Butter Cake, topped with a sweet vanilla glaze that soaks in for extra flavor.
Ingredients
Scale
- 1 box white cake mix
- 2 eggs, whisked
- 1/3 cup butter, melted
- For the Butter Glaze:
- 1/4 cup butter
- 1/2 cup granulated sugar
- 1 tbsp water
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix cake mix, whisked eggs, and melted butter until combined. The dough will be thick.
- Drop tablespoon-sized scoops onto the baking sheet. Bake for 8–10 minutes, or until edges are lightly golden. Let cool slightly.
- In a small saucepan over low heat, melt butter, sugar, and water, stirring until sugar dissolves. Remove from heat and stir in vanilla.
- While warm, spoon the glaze over each cookie, letting it soak in.
- Let the glaze set before serving. These cookies get even better the next day!
Notes
For the best texture, don’t overbake. Let the cookies absorb the glaze for maximum buttery goodness!
