Description
Delicious and tangy lemon cream cheese bars with a buttery crust and a dusting of powdered sugar.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar (divided)
- 2 cups all-purpose flour
- 1 package cream cheese, softened
- 1 egg
- Fresh zest and juice from one juicy lemon
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or foil.
- In a mixing bowl, beat together the butter and 1/2 cup of sugar until creamy.
- Add the flour and mix until a dough forms.
- Press the dough into the bottom of the prepared pan and bake for 15 minutes.
- While the crust bakes, beat the cream cheese, remaining 1/2 cup of sugar, egg, lemon zest, and lemon juice until smooth.
- Pour the cream cheese mixture over the warm crust and spread evenly.
- Bake for an additional 20-25 minutes, or until the filling is set.
- Allow to cool completely before dusting with powdered sugar.
- Cut into bars and enjoy!
Notes
Use fresh lemons for the best flavor. Organic lemons have thinner skins and provide more zest.
