Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar (divided)
  • 2 cups all-purpose flour
  • 1 package cream cheese, softened
  • 1 egg
  • Fresh zest and juice from one juicy lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or foil.
  2. In a mixing bowl, beat together the butter and 1/2 cup of sugar until creamy.
  3. Add the flour and mix until a dough forms.
  4. Press the dough into the bottom of the prepared pan and bake for 15 minutes.
  5. While the crust bakes, beat the cream cheese, remaining 1/2 cup of sugar, egg, lemon zest, and lemon juice until smooth.
  6. Pour the cream cheese mixture over the warm crust and spread evenly.
  7. Bake for an additional 20-25 minutes, or until the filling is set.
  8. Allow to cool completely before dusting with powdered sugar.
  9. Cut into bars and enjoy!

Notes

Use fresh lemons for the best flavor. Organic lemons have thinner skins and provide more zest.
