This vintage Lime Green Jello Salad with Cottage Cheese & Pineapple brings sweet-tart citrus, creamy cottage cheese, and tropical pineapple together in a nostalgic, jiggly side dish perfect for holidays and potlucks.

- 2 packages (3 oz each) lime-flavored gelatin
- 2 cups boiling water
- 1 can (20 oz) crushed pineapple in juice, undrained
- 2 cups small curd cottage cheese
- 1 cup mayonnaise (not Miracle Whip)
- 1 cup chopped walnuts or pecans (optional)
- 1 cup miniature marshmallows (optional)
- 1/2 cup finely chopped celery (optional)
- Lettuce leaves for serving (optional)
Instructions
- In a large bowl, dissolve lime gelatin in boiling water. Stir continuously for 2 minutes until completely dissolved.
- Add crushed pineapple with juice and stir to combine. Let mixture cool at room temperature for 30–40 minutes until slightly thickened.
- Gently fold in cottage cheese, mayonnaise, and any optional ingredients such as nuts, marshmallows, or celery.
- Pour mixture into a 9×13-inch glass dish or gelatin mold. Cover and refrigerate for at least 4 hours, preferably overnight, until firm.
- If using a mold, dip briefly in warm water before inverting onto a serving dish. Slice and serve chilled, optionally on lettuce leaves.
Notes
Be sure to use canned pineapple—fresh pineapple contains enzymes that prevent gelatin from setting. Chill thoroughly before serving for the best texture and flavor.
