A beefy, cheesy, stick-to-your-ribs dish with NO pork but ALL the flavor! This layered meatloaf casserole is topped with creamy mashed potatoes and melty cheddar cheese — comfort food at its finest, with a pork-free twist!

- For the Meatloaf Base:
- 1.5 lb ground beef
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- ½ cup breadcrumbs
- ¼ cup milk
- 1 egg
- 1 tablespoon Worcestershire sauce substitute (coconut aminos or beef broth)
- Salt and pepper to taste
- For the Mashed Potato Layer:
- 4 large russet potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup sour cream
- ½ cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional Toppings:
- ½ cup shredded cheddar cheese
- Chopped green onions
- Beef bacon bits or turkey bacon bits (pork-free!)
Instructions
- Preheat Oven: Set oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Prepare the Meatloaf Base: In a large bowl, mix together ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire substitute, salt, and pepper. Press evenly into baking dish.
- Bake the Meatloaf: Bake uncovered for 25–30 minutes or until cooked through. Drain any excess grease.
- Prepare the Mashed Potatoes: While meatloaf bakes, boil potatoes in salted water until fork-tender (about 15 min). Drain, mash with butter, sour cream, milk, salt, and pepper. Stir in cheddar cheese.
- Assemble the Casserole: Spread mashed potatoes over meatloaf. Top with extra cheese, green onions, and pork-free bacon bits.
- Final Bake: Return to oven and bake for 15 minutes until cheese is bubbly.
- Serve: Let cool for 5 minutes before slicing. Pair with a crisp salad or green beans.
Notes
Tip: For extra crispiness, broil the top for 2–3 minutes after baking. Storage: Leftovers keep well in the fridge up to 3 days. Reheat in the oven for best results!
