  • 1.5 lb ground beef
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 egg
  • 1 tablespoon Worcestershire sauce substitute (coconut aminos or beef broth)
  • Salt and pepper to taste
  • For the Mashed Potato Layer:
  • 4 large russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional Toppings:
  • ½ cup shredded cheddar cheese
  • Chopped green onions
  • Beef bacon bits or turkey bacon bits (pork-free!)

Instructions

  1. Preheat Oven: Set oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Prepare the Meatloaf Base: In a large bowl, mix together ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire substitute, salt, and pepper. Press evenly into baking dish.
  3. Bake the Meatloaf: Bake uncovered for 25–30 minutes or until cooked through. Drain any excess grease.
  4. Prepare the Mashed Potatoes: While meatloaf bakes, boil potatoes in salted water until fork-tender (about 15 min). Drain, mash with butter, sour cream, milk, salt, and pepper. Stir in cheddar cheese.
  5. Assemble the Casserole: Spread mashed potatoes over meatloaf. Top with extra cheese, green onions, and pork-free bacon bits.
  6. Final Bake: Return to oven and bake for 15 minutes until cheese is bubbly.
  7. Serve: Let cool for 5 minutes before slicing. Pair with a crisp salad or green beans.

Notes

Tip: For extra crispiness, broil the top for 2–3 minutes after baking. Storage: Leftovers keep well in the fridge up to 3 days. Reheat in the oven for best results!
