  • 1 pound ground beef (90% lean recommended)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 pint cherry tomatoes, halved
  • 4 cups baby spinach
  • 2 green onions, thinly sliced (white and green parts separated)
  • ½ teaspoon dried oregano
  • Salt & freshly ground black pepper, to taste
  • 2 tablespoons crumbled feta cheese (optional)

Instructions

  1. Sauté the Vegetables: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chopped onion and cook for 2–3 minutes. Stir in garlic and cook for 1 minute. Add bell pepper and zucchini, sauté for 4–5 minutes. Add cherry tomatoes and cook until blistered, 3–4 minutes. Fold in spinach and white parts of green onions until wilted. Remove veggies from skillet.
  2. Cook the Ground Beef: In the same skillet, add remaining 1 tbsp olive oil. Add ground beef, break apart, and season with oregano, salt, and pepper. Cook for 5–7 minutes until browned and cooked through. Drain excess fat if needed.
  3. Combine and Serve: Return sautéed veggies to skillet. Stir in green parts of green onions. Cook 2–3 minutes more. Top with feta cheese (if using). Serve warm.
