Ingredients
- For the Cake:
- Nonstick cooking spray
- 1 box chocolate cake mix
- 1 cup (240ml) whole milk, room temperature
- 3 large eggs
- 1 large egg yolk
- ½ cup (120ml) vegetable oil
- For the Green Ganache:
- 2½ cups (435g) white chocolate chips
- 1 can (14 oz) sweetened condensed milk
- 3 tablespoons unsalted butter, room temperature
- 8 drops green gel food coloring
- For Decorating:
- Buttercream frosting or canned vanilla frosting
- Blue gel food coloring
- Black gel food coloring
- Purple gel food coloring
- 12 white candy melts, divided
Instructions
- Make the Cakes: Preheat oven to 350°F (180°C). Spray 6-cavity round silicone baking mold with nonstick spray. In large bowl, whisk together cake mix, milk, eggs, egg yolk, and vegetable oil until smooth.
- Bake: Pour batter into prepared molds, filling about ⅔ of the way. Set mold on baking sheet and bake 14 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes in molds, then release and cool completely on wire rack set over rimmed baking sheet.
- Make Green Ganache: In large microwave-safe bowl, combine white chocolate chips, sweetened condensed milk, and butter. Microwave 60-90 seconds until melted and smooth. Add green gel food coloring and stir well. Let cool until slightly thickened, 3-4 minutes.
- Coat Cakes: Pour green ganache over top of each cooled cake, letting it drip down sides. Let sit 10 minutes at room temperature, then transfer to freezer for 10 minutes until hardened. Add remaining ganache to piping bag with small tip.
- Prepare Colored Frostings: Add 1 cup vanilla frosting to medium bowl with few drops purple food coloring and stir. Transfer to piping bag with medium round tip. Divide ¼ cup frosting between 2 small bowls, color one blue and one black. Transfer to piping bags with small round tips.
- Decorate Mike’s Features: Cut 6 white candy melts in half for ears. Set cake on small cake board. Pipe purple frosting on front and press on whole white candy melt for eye. Stick 2 candy melt halves into top for ears. Pipe blue frosting onto center of white candy, then smaller black dot on top. Pipe green ganache over eye for unibrow. Pipe purple frosting around bottom edge.
- Complete All Cakes: Repeat decorating process with remaining 5 cakes. Serve at room temperature or chilled.
