- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups Monterey Jack cheese, shredded
- 4 large eggs
- 1 cup half-and-half
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare the Pie Crust: Cut the cold butter into the flour and salt until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time, mixing gently until the dough just comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- Cook the Filling: Brown the turkey sausage in a large skillet over medium heat, breaking it into smaller pieces as it cooks. When nearly done, add the onions and bell peppers, cooking until softened but not browned. Add garlic and cook for one more minute. Drain on paper towels to prevent a soggy crust.
- Roll Out and Form the Crust: Preheat your oven to 375°F (190°C). Roll the chilled dough on a lightly floured surface to fit a 9-inch pie plate. Transfer carefully to the plate, trim excess, and crimp the edges. For an extra-golden crust, brush the edges with a beaten egg before baking.
- Assemble the Pie: Spread the cooled sausage mixture evenly over the bottom of the pie crust. Sprinkle with 1½ cups of the shredded Monterey Jack cheese. Whisk together eggs, half-and-half, dried herbs, salt, and pepper. Pour this mixture over the cheese and sausage in the pie crust.
- Bake to Perfection: Bake for 35 minutes, then sprinkle the remaining ½ cup of cheese on top. Return to the oven and bake for an additional 10-15 minutes, until the center is set and the top is golden. Let the pie rest for at least 10 minutes before slicing.
Notes
For a gluten-free version, use a pre-made gluten-free pie crust. Substitute turkey sausage with pork sausage for a richer flavor. Be sure to drain the sausage mixture thoroughly to avoid sogginess.
