- 200g cookies (any type you prefer)
- 80g melted butter
- 250g cream cheese (room temperature)
- 50g sugar
- 20g icing sugar
- 200ml whipping cream
- 150ml fresh orange juice
- 5g gelatin (or substitute with leaf gelatin)
Instructions
- Crush the cookies into fine crumbs using a food processor or a ziplock bag with a rolling pin.
- Mix the crushed cookies with melted butter until evenly combined, then press the mixture firmly into the bottom of a cake mold. Chill in the freezer.
- In a bowl, beat cream cheese until smooth. Add sugar and icing sugar, mixing well.
- Pour in whipping cream and continue mixing until smooth and fluffy.
- Pour the mixture over the chilled cookie crust and spread evenly.
- Heat orange juice slightly and dissolve the gelatin in it, stirring well.
- Let it cool slightly, then pour a thin layer over the cheesecake.
- Chill the cake in the fridge for at least 2 hours until set.
- Once fully set, carefully remove the cheesecake from the mold, slice, and enjoy!
Notes
For an extra burst of citrus flavor, zest some orange peel into the cheesecake mixture before chilling.
