- 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 1 cup long-grain white rice (or brown rice for a healthier option)
- 2 cups chicken broth
- 1/4 cup honey
- 1/4 cup BBQ sauce (your favorite brand or homemade)
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Add chicken to the skillet and cook until browned, about 5-7 minutes.
- Stir in rice and cook for 1 minute to toast slightly.
- Pour in chicken broth, honey, BBQ sauce, dried thyme, and dried parsley. Stir well.
- Bring to a simmer, cover, and reduce heat to low.
- Cook for 15-20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat and let sit for 5 minutes before fluffing with a fork.
- Serve hot and enjoy!

For a smoky twist, use a hickory or mesquite-flavored BBQ sauce.
