- 2 cups pancake mix
- 1¼ cups milk
- 1 large egg
- ½ tsp vanilla extract
- 1 lb chicken sausage, cooked and crumbled
- ½ cup shredded cheddar cheese (optional, for extra flavor)
- 2 tbsp melted butter
- 1 tbsp maple syrup (optional, for a hint of sweetness)
Instructions
- Preheat & Prep: Preheat oven to 375°F (190°C). Grease a 9×9-inch or 9×13-inch baking dish.
- Mix the Pancake Batter: In a large bowl, whisk together pancake mix, milk, egg, and vanilla extract until smooth. Stir in melted butter & maple syrup (if using).
- Assemble the Casserole: Pour half of the pancake batter into the baking dish. Sprinkle the cooked chicken sausage evenly over the batter. Top with shredded cheese (if using). Pour the remaining pancake batter over the top, spreading evenly.
- Bake: Bake for 25-30 minutes or until golden brown and set in the center. Let cool for 5 minutes before slicing.
- Serve & Enjoy: Serve warm with butter & maple syrup or hot sauce for a savory kick!
Notes
For extra flavor, try adding a sprinkle of cinnamon or nutmeg to the pancake batter.
