- 24 mini peanut butter cups, unwrapped
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large mixing bowl, beat butter, peanut butter, brown sugar, and granulated sugar until creamy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients, stirring until just combined.
- Roll dough into 1-inch balls and place each in a mini muffin cup.
- Bake for 8-10 minutes or until lightly golden.
- Immediately press a mini peanut butter cup into the center of each cookie while warm.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For an extra chocolatey touch, drizzle melted chocolate over the cooled cookies before serving.
