If you love pecan pie, these easy-to-make muffins are going to be your new obsession! Soft, chewy, buttery, and packed with pecans, they taste like mini pecan pies in muffin form.

- 1 cup pecans, chopped
- 1 cup brown sugar, firmly packed
- ½ cup all-purpose flour
- 2 large eggs
- ½ cup butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
- In a bowl, combine pecans, brown sugar, and flour.
- In a separate bowl, whisk eggs and melted butter.
- Stir the wet ingredients into the dry until fully combined.
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 18-22 minutes, or until the tops are golden brown and a toothpick comes out clean.
- Let them cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
For an extra crunchy caramelized topping, sprinkle a little coarse sugar over the batter before baking!
