Description

If you love pecan pie, these easy-to-make muffins are going to be your new obsession! Soft, chewy, buttery, and packed with pecans, they taste like mini pecan pies in muffin form.


Ingredients

  • 1 cup pecans, chopped
  • 1 cup brown sugar, firmly packed
  • ½ cup all-purpose flour
  • 2 large eggs
  • ½ cup butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
  2. In a bowl, combine pecans, brown sugar, and flour.
  3. In a separate bowl, whisk eggs and melted butter.
  4. Stir the wet ingredients into the dry until fully combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  6. Bake for 18-22 minutes, or until the tops are golden brown and a toothpick comes out clean.
  7. Let them cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For an extra crunchy caramelized topping, sprinkle a little coarse sugar over the batter before baking!
