A creamy, cheesy, and comforting scalloped potatoes dish that’s perfect for any occasion!
Ingredients

- 4 cups thinly sliced potatoes (Russet or Yukon Gold)
- 3 tablespoons butter (unsalted preferred)
- 3 tablespoons flour
- 1 1/2 cups milk (whole milk recommended)
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese (for topping)
- Paprika, for color
Instructions
- Preheat oven to 375°F (190°C).
- Grease a baking dish.
- In a saucepan over medium heat, melt butter.
- Stir in flour and cook for 1 minute, whisking constantly.
- Slowly add milk while whisking until smooth.
- Season with salt and cayenne pepper, then cook until thickened.
- Layer half of the sliced potatoes in the baking dish.
- Pour half of the sauce over the potatoes and sprinkle with half of the cheese.
- Repeat layers with remaining potatoes, sauce, and cheese.
- Sprinkle additional 1/2 cup cheese and dust lightly with paprika.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 25-30 minutes until golden brown and bubbly.
- Let cool for a few minutes before serving.
Notes
For extra flavor, add sautéed onions or garlic between the layers.
