For the Sweet Potato Bread:

  • 2 medium sweet potatoes (about 1 cup mashed)
  • 1/4 cup white miso paste
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons sesame seeds
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons sunflower seeds

Instructions

  • Prepare the Sweet Potatoes:
    • Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork and roast them for 40-50 minutes until soft. Allow them to cool, then peel and mash.
  • Make the Bread Batter:
    • In a large mixing bowl, whisk together the mashed sweet potatoes, miso paste, melted butter, and sugar until smooth. Add the eggs one at a time, mixing well after each addition.
    • In another bowl, whisk the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Add Seeds:
    • Stir in the sesame seeds, pumpkin seeds, and sunflower seeds, reserving a few for sprinkling on top of the loaf.
  • Bake:
    • Grease a 9×5-inch loaf pan and pour the batter into the pan. Sprinkle the reserved seeds on top.
    • Bake in a preheated oven at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  • For a nuttier flavor, you can lightly toast the seeds before adding them to the batter.
