Description
A creamy, smoky, and slightly spicy soup inspired by jalapeño poppers, loaded with grilled chicken and cheese.

- 2 cups grilled chicken, shredded
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 jalapeños, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1/4 cup crispy bacon, crumbled
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until translucent, about 3-4 minutes.
- Stir in minced garlic and diced jalapeños, cooking for another minute.
- Pour in chicken broth and add smoked paprika, cumin, salt, and black pepper. Bring to a simmer.
- Add shredded grilled chicken and let simmer for 10 minutes.
- Stir in cream cheese until fully melted and combined.
- Reduce heat and add shredded cheddar cheese, stirring until melted.
- Pour in heavy cream and stir to combine.
- Serve hot, garnished with crispy bacon and fresh cilantro.
Notes
For extra spice, leave some jalapeño seeds in. Pair with crusty bread for a heartier meal.
