Ingredients

- 8 oz (225g) pasta (rotini or bowtie)
- 3 cups fresh baby spinach, chopped
- 1/2 cup dried cranberries
- 1/2 cup crumbled feta cheese
- 1/4 cup (30g) chopped walnuts or pecans
- 1/4 small red onion, thinly sliced
- For the Dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and black pepper, to taste
Instructions
- Cook the pasta: Boil pasta according to package instructions until al dente. Drain and rinse under cold water.
- Prepare the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper.
- Combine the salad: In a large bowl, mix cooked pasta, chopped spinach, dried cranberries, feta cheese, walnuts or pecans, and red onion.
- Dress the salad: Pour the dressing over the salad and toss to combine.
- Serve: Let sit for 10 minutes to allow flavors to meld, then serve chilled or at room temperature.
Notes
For extra crunch, toast the walnuts or pecans before adding them to the salad!
