Ingredients

  • 8 oz (225g) pasta (rotini or bowtie)
  • 3 cups fresh baby spinach, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup (30g) chopped walnuts or pecans
  • 1/4 small red onion, thinly sliced
  • For the Dressing:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta: Boil pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Prepare the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper.
  3. Combine the salad: In a large bowl, mix cooked pasta, chopped spinach, dried cranberries, feta cheese, walnuts or pecans, and red onion.
  4. Dress the salad: Pour the dressing over the salad and toss to combine.
  5. Serve: Let sit for 10 minutes to allow flavors to meld, then serve chilled or at room temperature.

Notes
