- ½ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ¼ cup cold butter, cut into pieces
- ½ cup milk
- 1 egg
- 2 cups fresh strawberries, sliced
- ¼ cup sugar (for strawberries)
- 1 cup heavy whipping cream
- 1 tbsp powdered sugar
- ½ tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C) and grease a baking sheet.
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- In a separate bowl, mix milk and egg, then add to the dry ingredients. Stir until just combined.
- Drop dough onto the baking sheet in small rounds and bake for 15-18 minutes, until golden brown.
- Meanwhile, mix sliced strawberries with ¼ cup sugar and let sit for 10 minutes.
- Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Once the shortcakes are cooled, slice in half and layer with strawberries and whipped cream.
- Serve immediately and enjoy!
Notes
For extra flavor, add a splash of lemon juice to the strawberries before serving.
