  • ½ cup sugar

  • ½ tsp salt
  • ¼ cup cold butter, cut into pieces
  • ½ cup milk
  • 1 egg
  • 2 cups fresh strawberries, sliced
  • ¼ cup sugar (for strawberries)
  • 1 cup heavy whipping cream
  • 1 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking sheet.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix milk and egg, then add to the dry ingredients. Stir until just combined.
  5. Drop dough onto the baking sheet in small rounds and bake for 15-18 minutes, until golden brown.
  6. Meanwhile, mix sliced strawberries with ¼ cup sugar and let sit for 10 minutes.
  7. Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  8. Once the shortcakes are cooled, slice in half and layer with strawberries and whipped cream.
  9. Serve immediately and enjoy!

Notes

For extra flavor, add a splash of lemon juice to the strawberries before serving.
