Rich and fudgy vegan sweet potato brownies made with wholesome ingredients for a guilt-free indulgence.


Ingredients

  • 1 large sweet potato
  • 1/2 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: vegan chocolate chips, chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. Peel and chop the sweet potato, then steam or boil until soft. Mash until smooth.
  3. In a mixing bowl, combine mashed sweet potato, maple syrup, coconut oil, and vanilla extract.
  4. In a separate bowl, whisk together almond flour, cocoa powder, baking powder, and salt.
  5. Gradually fold dry ingredients into the wet ingredients until fully combined.
  6. Stir in optional vegan chocolate chips or chopped nuts.
  7. Pour batter into the prepared baking dish and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out mostly clean.
  9. Let cool before slicing and serving.

Notes

For an extra fudgy texture, refrigerate the brownies for a few hours before serving.
