- 1 large sweet potato
- 1/2 cup almond flour
- 1/2 cup cocoa powder
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: vegan chocolate chips, chopped nuts
Instructions
- Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
- Peel and chop the sweet potato, then steam or boil until soft. Mash until smooth.
- In a mixing bowl, combine mashed sweet potato, maple syrup, coconut oil, and vanilla extract.
- In a separate bowl, whisk together almond flour, cocoa powder, baking powder, and salt.
- Gradually fold dry ingredients into the wet ingredients until fully combined.
- Stir in optional vegan chocolate chips or chopped nuts.
- Pour batter into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted comes out mostly clean.
- Let cool before slicing and serving.
Notes
For an extra fudgy texture, refrigerate the brownies for a few hours before serving.
