For the Muffins:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/3 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 3/4 cup whole milk (or any non-dairy milk alternative)
  • 1 tsp vanilla extract

For the Cinnamon-Sugar Coating:

  • 1/4 cup unsalted butter, melted
  • 1/3 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  • Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick spray.
  • Prepare the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • Mix the Wet Ingredients:
    • In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Beat in the egg, followed by the milk and vanilla extract, until smooth.
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fill the Muffin Tin:
    • Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  • Bake:
    • Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool for 5 minutes in the pan before transferring to a wire rack.
  • Prepare the Coating:
    • In a small bowl, mix the granulated sugar and cinnamon. In another bowl, melt the butter.
  • Coat the Muffins:
    • While the muffins are still warm, dip the tops into the melted butter, then into the cinnamon-sugar mixture.

    • Serve warm or at room temperature.

Notes

  • For a healthier twist, substitute some of the flour with whole wheat flour.
