For the Muffins:
- 1 3/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/3 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 large egg, room temperature
- 3/4 cup whole milk (or any non-dairy milk alternative)
- 1 tsp vanilla extract
For the Cinnamon-Sugar Coating:
- 1/4 cup unsalted butter, melted
- 1/3 cup granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick spray.
- Prepare the Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- Mix the Wet Ingredients:
- In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Beat in the egg, followed by the milk and vanilla extract, until smooth.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fill the Muffin Tin:
- Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
- Bake:
- Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool for 5 minutes in the pan before transferring to a wire rack.
- Prepare the Coating:
- In a small bowl, mix the granulated sugar and cinnamon. In another bowl, melt the butter.
- Coat the Muffins:
- While the muffins are still warm, dip the tops into the melted butter, then into the cinnamon-sugar mixture.
- Serve and Enjoy:
- Serve warm or at room temperature.
Notes
- For a healthier twist, substitute some of the flour with whole wheat flour.
- Store leftovers in an airtight container at room temperature for up to 3 days.
