Instructions

  1. Bring butter to cool room temperature (65°F). Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugar in a stand mixer for 3-4 minutes until light and fluffy.
  3. Add egg, vanilla, and almond extract. Beat until fully incorporated and smooth.
  4. In a separate bowl, whisk flour, salt, and baking powder. Gradually mix into butter mixture on low speed until just combined.
  5. Form dough into a disc, wrap in plastic, and chill for at least 30 minutes.
