- 1 tsp salt
- 1 tsp black pepper
For the Chicken:
- 2 chicken breasts, diced
- ¼ cup flour (or gluten-free flour blend)
- ¼ cup cornstarch
- Salt and pepper to taste
- ¼ cup water (add 1 tbsp at a time if needed)
- ½ cup frying oil

Instructions
- Coat and Fry the Chicken: In a bowl, combine chicken, flour, cornstarch, salt, pepper, and water. Mix until coated. Heat oil in a wok or pan. Fry chicken in batches for 10-12 minutes until golden and crispy. Drain on paper towels.
- Prepare the Fried Rice Base: In the same pan, sauté shallot, garlic, and ginger for 30-60 seconds until fragrant. Add red pepper flakes and vegetables; cook for 1-2 minutes.
- Master the Perfect Fried Rice: Add rice to the pan, breaking up clumps. Drizzle sesame oil and soy sauce, stirring to combine. Push rice to one side, scramble eggs on the other, then mix together.
- Create the Perfect Bang Bang Sauce: Whisk together mayonnaise, garlic chili paste, spicy honey, sriracha, salt, and pepper. Toss crispy chicken in the sauce until coated.

Notes
