- For the Knafeh Layer:
- 1 cup kataifi/knafeh pastry (available at Middle Eastern grocery stores)
- 2 tablespoons butter (melted)
- Optional: A drizzle of honey or agave syrup for added sweetness
- For the Chocolate Coating:
- 1 cup high-quality milk chocolate chips (or chopped bars)
- 1 tablespoon heavy cream (or coconut cream for a dairy-free option)
Instructions
- Preheat oven to 350°F (175°C) if toasting kataifi/knafeh.
- Line a small baking dish with parchment paper for easy assembly.
- In a food processor, blend pistachios and powdered sugar until finely ground.
- Gradually add olive oil, vanilla extract, and salt, blending until smooth.
- Spread kataifi/knafeh pastry evenly on a lined baking sheet, drizzle with melted butter, and bake for 8-10 minutes until golden and crispy.
- Optional: Drizzle baked knafeh with honey or agave syrup for added sweetness.
- Melt the milk chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Stir in heavy cream or coconut cream for a glossy finish.
- On a flat surface, spread a thin layer of melted chocolate as a base.
- Place the cooled knafeh layer on top, pressing lightly.
- Spread pistachio cream over the knafeh layer evenly.
- Pour the remaining melted chocolate over the pistachio layer and spread to cover completely.
- Refrigerate for 30 minutes to set.
- Once chilled, cut into bite-sized bars and garnish with crushed pistachios or edible gold dust.
- Serve immediately or store in an airtight container in the refrigerator for up to 5 days.

For a more intense flavor, toast the pistachios before blending.
